Courgette and Cheddar Muffins!

I am struggling at work as my hardrive has finally completely broke on my work laptop and needs to be replaced…check out the scary error message of dome!

So my desk now looks like this! I have managed to log on to another laptop but can only access the internet – no emails etc! Oh well!

Last night i got the baking bug, i didn’t really know what i wanted to bake exactly i knew i just wanted to bake something. A work colleague gave me some surplus beans and courgettes (which were huge!), so i decided i would do something with them.

There was some serious baking going on as i wore the apron – this only gets worn when i know it is going to get messy (i.e not following a recipe!)

It reads: Many people have eaten in this kitchen and have gone on to live normal healthy lives!

I had purchased some vegan cheese and knew i wanted to use this also in my recipe…

This was the first time i had tried vegan cheese and i actually thought it was not bad, it had the texture of feta and had a mild mellow taste. I decided to make Courgette and Cheddar Muffins. I used;

  • 200g courgette (chopped in food mixer)
  • 150g wholemeal flour
  • 50g oats
  • 90g grated Cheezly vegan cheese
  • 1 tspn baking powder
  • 2 tbsp mustard
  • pinch salt and pepper
  • 90ml soya milk

I basically mixed all the dry ingredients together first and then added the wet until it was all combined together.

I then spooned the mixture into muffin cases and sprinkled with more vegan grated cheese. The muffins were cooked at 200 for 30 mins (or until brown)…

Whilst this was cooking, i had a dinner of roasted potatoes, peas & sweetcorn and a mushroom burger from Tesco (i had almost eaten vegan all day yesterday until i ate the burger – it had egg in it – i may have a vegan week challenge soon).

I had a spoonful of this chutney on the side, it was both sweet and spicy and complemented the burger so well.

Once my dinner had settled i had a warm muffin, not because i was hungry but because i wanted to taste my creation…i thought the muffin looked quite dry…

…but once i opened it up was lovely and moist…

Did i like it?…pictures speak louder than words i think!

    I’ve not been watching this year’s big brother but am excited to see it now it’s got the mix of previous contestants in it! The muffins sound interesting but I definitely prefer sweet to savoury muffins! I hope your laptop problems are solved soon!

    Urrgh, I hope you get yout computer sorted. It doesn’t look good!! The muffins look tasty though. Did you like the vegan cheese? I tried it once and wasn’t a fan but I do like the vegan parmesan I bought a while ago.

    Those look tasty – I might have a go at making a batch myself – I’ve been neglecting my cooking so this will give me something to get back into it – I knew I could rely on you for inspiration 😉

    I’ve been going back through all the posts I missed in the last couple of weeks and really enjoyed your photos!
