What to do with an Aubergine/Eggplant?

When i went food shopping on Monday i picked up an aubergine and i have no idea why? So i put my creative food juices into action this evening and made the most delicious creation.

First i grilled the aubergine using spray oil and rock salt…

Whilst the aubergine was cooking i dry fried an onion, approx 6 mushrooms sliced and 2 cloves of garlic in the large frying pan and simmered red wine and tomatoes in the smaller frying pan for the sauce….

Once i simmered the sauce for approx 10 mins i blended the wine and tomatoes together….

I then transfered all of the above into a greased ovenproof dish….

A layer of strong cheddar and approx 10 mins under a medium grill and i created this amazing, flavourful bake!

I had about a third of the bake with a leftover bean burger from yesterday which i topped with hummus and BBQ sauce, holy yummyness!! The bake was so tasty, next time i make this i will actually bake all the ingredients before grilling with cheese as the aubergine was a little tough around the edges but fine to eat – the red wine and tomato sauce was truly something else.

I ended my meal with a slice of Easter chocolate cake, which was made by my lovely MIL, this cake is fluffy and so chocolatey, my MIL is an amazing cook.

It’s good being back but i need to catch some zzzzzzzzzzzzzzzzzzzzzzzzzz – i’m so tired! x

    Yo’re so sweet- I love how you read all my posts that you missed and commented on all of them! 🙂 So have never tried aubergine, I may have to now. Sleep well!

    mmm this looks yummy! I love aubergine. And that cake looks amazing. Your MIL is definitely a great cook!

      She is a fantastic cook, but i wish she would stop bringing her cakes to our house – i keep eating them!
