Mushrooms & Stilton

My good blog friend Joanne at Thirty and Healthy blogged recently that she has never tried mushrooms!! I’m not sure how she has lived so long without them – i love them! To help Joanne out i made a mushroom meal last night to help her on her mushroom discovery way…hope you enjoy Joanne!

First i started with a small glass of red, not for cooking purposes, purely because a bottle was open and the husband offered to poor me one (Joanne this is optional and is for personal consumption only and not part of the recipe LOL!)

For the recipe which is stuffed flat mushrooms you will need for one person;

  • 2 flat mushrooms
  • 1 small onion or shallot
  • 1 piece of bread to make breadcrumbs
  • 1 tsp parsley
  • 1 tsp sage
  • blue stilton cheese (you can use any type of cheese if you do not like stilton – halloumi is also good)

Instructions;

Chop the onion finely (i can not wait to pick up my mini food processor today! I have nearly lost 2 fingers in the last week.)

 

Add the onion to a frying pan with a little oil and fry for 3-4 mins on medium until soft. In the meantime, if you do not have a food processor, grate a piece of bread to make crumbs (i used wholemeal bread).

Add the parsley, sage and breadcrumbs to the onion…

Mix all together and crumble in a small amount of stilton (depending on how cheesy you want it)…

I bought this blue cheese from Iceland and have used it before, it is strong but also creamy so not too overpowering, i strongly recommend it.

Put the mixed filling to one side and brown the 2 flat mushrooms on each side in the frying pan…

One browned, place the topping on top of both mushrooms and press down so it stays in place. Add a small slice of blue cheese on each and place in a pre-heated oven (190C) for approx 10-15 mins or until browned

Sorry below photo is on its side, i can’t figure out how to rotate it! I wanted something zesty with my mushrooms, so i made up this cous cous that i bought from Tesco recently. It was lemon and coriander flavour and was perfect for the job (i want to try and make this flavour from scratch soon as i am trying to reduce all processed food from my diet).

The end result was…mouthwatering! The flavours were amazing together (Joanne you are going to love this!) The mix of ingredients in the mushrooms made me go ‘YUUMMMM’ after every mouth full, the lemon had the perfect zing to complement the stilton.

The cous cous was really good!

The end result – a perfect meal!

Sorry i didn’t blog about this last night, i ended up revising till late and i am sad to say was watching New Moon AGAIN!

I’m off to the airport soon to take my exams, i get so nervous. I’m going to have a lovely hot shower (so i can carry out my belated morning skincare ritual as part of Project Me) and am going to nip to Argos to pick up my mini food processor (i have reserved Rachel Allen’s mini food processor on sale at £8.99! What a bargain and the reviews are fab!) I never thought i would see the day that i got excited by buying a kitchen appliance! LOL

    Aw thank you! The wine comment totally cracked me up! I promise I will try your recipe sometime this week (after I hit up tesco) and let you know how I get on. It looks yummy but I don’t like stilton, so will see what I can find. Good luck with your exam!!! I totally get excited about buying kitchen gadgets now too. It must be an age thing 😉

    This looks like a great recipe I love mushrooms and I hope Joanne likes it too. I so need to get a mini food processor and may get that one from Argos. How good is that at £8.99?? Brilliant!
