A Nice Autumn Warmer

Has it really been 2 weeks since i last posted…i hope you are still out there and haven’t given up on my yet!


To entice you back i thought i would make an Autumn Warmer…you know the type of meal, when you want to comfort eat but don’t want all the fat and stodge.


Let me introduce to you a red lentil cottage pie

If you would like to recreate this dish you will need;

  • potatoes for the mash on top (approx 3 medium)
  • 1 onion chopped
  • 1 tablespoon garlic puree
  • can of chopped tomatoes
  • 1 cup vegetable stock
  • 1 cup water
  • 2 tablespoons tomato puree
  • 1/3 cup red wine
  • 2/3 cup red lentils
  • 1 medium carrot chopped

Boil the potatoes until soften and mash – leave to one side.

Heat a little olive oil in a pan and add the onion – cook until softened.

Add all the other ingredients (as below) Sorry pics are small, not sure why they have loaded off my iphone like this?


Once stirred thoroughly, bring the mixture to the boil and then simmer for 15 mins, stirring occasionally. Place the lentil mixture in an ovenproof dish and add the mash on top (i added a little soya pure spread and milk to the tatties so they brown better).


Place in the oven for 20 mins and there you have it!




One delicious, healthy, unprocessed comfort meal…


My hubby tried this new dish and gave it a 10 out of 10 and he is a meat eater, in fact his exact words were it would have to be a REALLY good meat cottage pie to beat this one…i will make a vegetarian out of him one day!


I have just returned from a weekend in Scotland where i actually saw Chris Evans, Samuel L Jackson and Hugh Grant but that’s a story for another time.


It’s off to bed now with a lovely Scotch Whiskey night cap!

    Definitely not giving up on you – you always come back from an absence with something great like this!!

    I love the sound of this recipe – so hard to find things that are healthy but filling enough to make the OH eat them too and this looks like it’s just right! Also handy because I have all the ingredients for this already – so I think I’ll make it later this week 🙂

    This cottage pie looks delicious. Glad it is nutritious and your husband likes it. I will try it on mine.
